After being harvested by hand in small crates, the grapes are sorted in the cellar, destemmed andplaced in concrete vats for fermentation. To let the grapes express themselves as naturally as possible,we don't add any inputs and let the alcoholic and malolactic fermentations take place. After devatting,the pomace is gently pressed by a pneumatic press. Cuvée Les Trois Piliers is then, aged in concretetanks.

Terroir: The vines are located in Cravant- les-Côteaux. This cuvée comes mainly from ‘Trois Piliers” parcel plot at the foot of the hillside, which thrives on sandy calcareous colluvium.
Tasting
On tasting, the color is sparkling with ripe fruit. On the palate, this wine offers an elegant, solidstructure with excellent balance.
